Since I'm bach-ing tonight, I thought I'd just grill me a filet. Salted with kosher salt and let it get all happy. Gave it a healthy coating of coarse pepper...mmm

First Snake River Farms brisket. Trimmed to about 12 lbs. Injected with Meat Church Brisket Injection and rubbed with Killer Hogs Brisket Rub.
180 for 4 hours, 225 until completion. Wrapped in butcher paper at 170…
Not sure if all of their briskets are this quality I’ve heard mixed results but mine was unbelievable.

nothing to fancy just some fresh caught rainbow trout smoked at 180 for 30 min then wrapped in foil with butter for 30min at 300. made some great tacos complemented by some legit fresh fruit stand mexican salsa. also side not i cooked one fresh at the creek on a skillet with some diced up peppers for a youtube catch/cook video! creek side was awesome! even reeled in one while cooking.

Rack of pork… Costco has them Swift packaging.
 
Big Dan that looks awesome!!

Also seen as center cut rib rack. To me it’s the prime rib of pork. One of our favorite cuts now.

I prefer smoked over grilled but either way delish…
 
I do a reverse sear on it, cook to like 120 IT then crank the grill up until IT of 145
