No such thing as a dumb question here.. Cooking it low & slow until it gets close to your final temp like 10deg or so. Then either take it off and crank up your smoker to 500 ish preferably with sear plates to get them real hot and hit it a few minutes on each side to get to final temp. This is what gives you the desired finish either diamond design or flat. I prefer flat for the flavor.

I do usually have a gasser like a Weber grill or Flattop ready for the reverse sear part as it takes too long for the smoker to get there and I don't want to wait even if it is 10-15 min.

You can purchase Grill Grates for your Stampede for reverse searing but just think about the process to get it hot enough as mentioned above.

Don’t have the plates for the sear. They are on back order.
 
You can also just throw the steaks on the regular grates, but sear plates get hotter than those and provide a better sear.
 
Just took the steaks off the smoker. They look great for the first time trying it.

Where’s the best places to get some good Pellets from?
 
For me it takes too long to heat up the RT700 for reverse sear. I like to use a high heat grill for the final sear. I either use my weber gasser or my flat top griddle. high heat just to get a little char on the outside to finish it off and maybe add some garlic butter before plating and resting. I have the grill grates and tried to use them but don't like them, they are now under my gas grill collecting dust.
 
What temp would you smoke a steak at???
When I'm doing steaks I cook them using the reverse sear method. I smoke at 225 for an hour to 1.5 hours and then crank up the grill to 500 and place the steaks on my grill grates for about 2-3 minutes each side. Perfection!

Be sure to check out our internal temp temp chart for safe meat temps.
 
I smoke my steaks on low heat for 45 minutes. Around 40 minutes I turn it up to 325. When my timer goes off at the 45 minuted mark I flip the steaks over and cook them for 15 minutes. I check the IT then to see what it is and pull them off at 145-150. I let them rest for about 15 minutes - very tender and juicy.

I bought grill grates after seeing many suggestions to do so on FB pages. They are somewhere on my garage collecting dust.
 
I do 225 if going for smokey flavor or 250/275 for less smokey flavor but this is just for reverse searing. Once the IT is ~115-120 I sear it to ~130-135.
Do you flip at all when smoking prior to doing the reverse sear? Or just leave as is in one spot?
My 590 should be here in about a week and plotting my first meals!!!

I usually flip right before 100 but it is not necessary if you can't get to it. It is usually pretty even and the sear sorts it all out :).

Good luck with the 590.. you will be addicted!
