From my personal viewpoint, the problem is the unit’s architecture. I previously owned a Traeger pellet grill that I bought from Costco, around 2018/2019. It was specially made for sale through Costco. The difference between that Traeger and the Traeger I previously owned (for 13 years) a BBQ075, was that newer one didn’t have a smokestack. The unit was vented via multiple vent slots across the back of the grill. I am of the opinion that all those vents allow a good bit of smoke to escape. With a smokestack, there’s only one normal way for smoke to escape. And the way the drip pan sets in the pellet grill’s cooking chamber, it somewhat acts like a reverse flow smoker…if there’s a smokestack…where the smoke is drawn above the drip plan across the grates and drawn out the smokestack. In the 1000, there’s a row of vents in the back…across the whole chamber. In my personal opinion, that is counterproductive to smoking meat.

You may be able to add smoke with smoke tubes. That may be your best bet for smoking meats with that model. I’m not so sure the smoke setting will provide what you’re looking for.

OP not been back since May......could be AI anyways.
