Don’t have the plates for the sear. They are on back order.
Just took the steaks off the smoker. They look great for the first time trying it.

Look around for Lumberjack pellets. They are preferred by many. Bear Mountain are very good also.Where’s the best places to get some good Pellets from?

When I'm doing steaks I cook them using the reverse sear method. I smoke at 225 for an hour to 1.5 hours and then crank up the grill to 500 and place the steaks on my grill grates for about 2-3 minutes each side. Perfection!What temp would you smoke a steak at???

Do you flip at all when smoking prior to doing the reverse sear? Or just leave as is in one spot?I do 225 if going for smokey flavor or 250/275 for less smokey flavor but this is just for reverse searing. Once the IT is ~115-120 I sear it to ~130-135.
