Actually, not totally...
Went out of my way to stop at Costco last night ( on a Friday night .... WHAT, am I CRAZY ?!? ) to grab a Brisket for Sunday "Sorry, we're out of Brisket, they'll be on the Truck tonight"

Well, that throws my whole Feng Shui OFF !
"That sucks ....I need to trim and season her tonight, for a Sunday finish"The plan WAS .... Brisket this weekend

You may want to try your beef jerky on low. Keeps it about 180°, and I found you get a little more smoke flavor than 200. Just a suggestion if you want to try it out. Time's about the same

You spelled hot dogs wrong. It's not dawgs. You in the 1st grade or something? I put my chicken in for about 5 hrs at 220 degrees. 250 is too hot and ham is at 220 for 7 hrs (for a 11 lb butt)

You spelled hot dogs wrong. It's not dawgs. You in the 1st grade or something? I put my chicken in for about 5 hrs at 220 degrees. 250 is too hot and ham is at 220 for 7 hrs (for a 11 lb butt)

That's where the "Cross-Cut" idea stems from, and J. Spells it "DAWG"; and then., so will I

As for other items on MY List .... it works for us as it's written
And as I stated, Times and Temps ARE NOT etched in stone
