Since I have to work on Presidents Day, Momma cooked the Beefback Ribs today
She put them on at 2:00 this afternoon, with the Bull set at 180 (LO) for 3 hours
Slathered them with Smoked Tallow and cranked the Bull up to 250 until the Ribs reached 180 internal
Very moist and tender:
