Poultry Chicken Wings with Mac & Cheese

Wings:
Trim the wing tip.
Leave drum and flat connected. (Easier to turn)
Brine, Marinade, Dry Rub at least 4 hours prior to cooking. (Experiment with different stuff)
Preheat REC TEC to 275.
Smoke wings for 2 hours, flipping over halfway.
Bring heat to 375 and cook for 30-45 minutes until the skin is crisp. (This is a good time to sauce them if that's your plan.)

Mac & Cheese:
Ingredients:
1 Box 16oz Noodles (Elbow, Rotini, Shells)
I Pint Heavy Whipping Cream
3 Tbsp Butter
2 tsp Salt
2 tsp Pepper
2 Cups Shreaded Cheese (I use a Three Cheese Blend, but you can experiment. Usually 1 package is 2 cups)
¼ Cup Liquid (Water, Chicken Broth, Vegetable Broth)

Directions:
Cook noodles according to package.
Drain noodles and put into disposable pan.
Stir in 2 cups of Shredded Cheese.
Stir in butter and Heavy Whipping Cream.
Stir in ¼ Cup Liquid.
Add Salt and Pepper to taste.
Bring Rec Tec to 375 and smoke for approx. 1 hour. Should be bubbling.

Note: I usually put mine in the Rec Tec on the little shelf when cooking wings. The wing recipe calls to bring the wings to 375 for the last 30 to 45 minutes. Perfect time to put the mac pan in. At 30 to 45 minutes, take the wings off, close the lid, run them in the house, cover them, and go back out to get the mac 15 to 30 minutes later.

Dang those look tasty. Seeing this setup really makes me want to get a second shelf for my bull.
 
Looks good. I'm planning on doing wings this weekend. What sauce flavors did you do? I'm planning on Lemon Pepper, BBQ and Louisana Rub. I worked at Wingstop for 8 years, so I know how to make their flavors. Yes, always best to sauce when skin is crispy right out of fryer or off grill, the wings will absorb more flavor.
 
This is the Bbq Honey Mustard is did and they turned out great.

Ingredients:
1/4 cup honey
1/4 cup mustard
2 1/2 tbsp Homemade BBQ Sauce (Sweet Baby Rays)
2 tbsp mayo
1 tbsp fresh lemon juice
Pinch Salt
Pinch Pepper

Instructions:
In a small bowl, combine all ingredients.
Using a whisk, mix all together until well combined.
Marinate wings for at least 4 hrs.
I make two batches of this. One for marinating and one for brushing later.
 
This was the brine I did. After 4 hours of brining, I seasoned with Rec Tec Honey Rib Seasoning

8 Cups Water
0.5 Cups Kosher Salt
0.75 Cups Sugar
1 Tbsp Zatarain's Liquid Crab Boil
1 Tbsp Black Pepper
0.25 Tbsp Dried Rosemary
0.25 Tbsp Thyme
1 Tbsp Molasses
1 Tbsp Worcestershire
 
Thanks for recipes. I'll post some of my wing sauce flavors recipes after I downsize the quantities from the bulk recipes I have.
