Stampede 1st try beef ribs on 590

HI Got my beef ribs going on the 590,for about 2 hrs @ 180 extreme smoke with Lumber Jack hickory doesn't look like a bark is forming. What to do you guys thinks, it it just the low temps that is messing with my bark??? I got wings going on in 3 hrs.

PS I did drop the feed rate to 3 because at the beginning it was way over 180.

Hi Run them with? or rub then with..My 590 is still running @ 180 low extreme smoke.They were rubbed with Chupacbra Brisket Magic & a rub called Udder Madness.

Hi All I just bumped the temp up too 350. Ribs are cooking so slow.Looks like only chicken for dinner tonight. Still NO bark?

When you say bark, are you looking for a dark bark like on a brisket?
Here was my first ribs on my Bull using the 3-2-1 method at 225 with a homemade rub.

180 might take some time to get them to 190 deg.

Hi Finally the beef ribs are done.Could have used another 1 hr @350.
Chicken was just oK still NO crispy skin.

PS Yes I was looking for bark like on brisket.

I treat my beef ribs the same way as I do a brisket same rub and technique. I get plenty of bark.

Dan, Beef ribs have to cook to an internal temp of about 200, slowly. I make beef ribs a few times a month, now that I have a reliable source. It takes a while to each temp and get good bark. I start for an hour at 180 and then move to 225-250 for remaining time. Couldn't find pics of 321a ribs but these were close enough. ??

Hi I didn't get to taste much of the ribs. I just picked on some of the bark . I might have over rubbed them, the bark was spicy.;)

Beef ribs (heck, beef in general) don't need something elaborate. Some good ol' SPOG will do just fine in most cases. Let the meat shine.
Hi Next time SPOG. (y) ;) I still need a little more smoke flavor?
