The big game is tomorrow, what are you guys cooking Superbowl?

I'll be making about 12 pounds of chicken wings and the wife will be making your awesome chicken dip!

16.5 lbs whole prime brisket. This will be number 30-something for me. I love it so much..

I'll be grilling about 7 pounds of wings, a couple pounds of kielbasa, some home made hummus and pita bread and some pull apart pepperoni pizza. And of course some adult beverages.....

Wings /Nachos were the request from the kids...i have two specialties in my limited skills. Smoking stuff and Mexican (Nachos, Quesadillas, etc.)

So - smoking some inexpensive sirloin in the morning that will be cut to strips and then added to "steak" nachos and then for the game i will be making about 10 lbs of wings. Three types of season...

1) Traditional - Smoke with salt/white pepper and then mix with Redhot, butter and white pepper. (amazing buffalo).

2) Dry rub - Bbq… kids love these...Simple wing smoke

3) Rec Tec Greek Rub - This seems to be a favorite of the older folks who don't love "hot" in the traditional recipe.

On the nachos i cook as follow:

Bottom layer of chips - cheese, beans, onions, green peppers and smoked sirloin. Second layer of chips.. cheese and steak...

Then bake this in oven at 450 for about 5-6 minutes until edge of chips start to turn brown and cheese is melted (can't use too much cheese).

Then before serving i add to top layer fresh cut green peppers, onions, jalapenos and tomatoes on the melted cheese... for a fresh crunch... more flavor on the GPs/Onions, etc.

Fairly easy for both!!!
