Today I decided to break in the new Bull with something I’ve never cooked before. Leg of lamb! I seasoned with bacon and chicken thighs previously, but I wanted to get elaborate with my first real smoke on the new recteq. Butterflied it open and rubbed it with olive oil, fresh thyme, rosemary, oregano, s&p, and garlic. Rolled it up and tied it off with twine, seasoned the outside and let rest in the fridge overnight. Smoked for 4 hours at 225 basting every 45 mins with red wine vinegar, oil, and seasoning from the lamb. Made maple bacon brussel sprouts and herb butter potatoes. This Bull is amazing! Held steady and made a meat totally out of my comfort zone and it was amazing. If you’re on the fence about smoking a leg of lamb. Do it. You won’t regret it.
