    Fantastic low-carb breakfast.

Leftover pulled pork topped with cheese, fried eggs and hot sauce. I have to eat low-carb because of type two diabetes, and keeping breakfast interesting can sometimes be a challenge. This was good.

Don't really matter what is on the grill...

but you can be sure Jimmy is on the stereo right now. Yes, I am a pirate two hundred years too late The cannons don't thunder there's nothin' to plunder I'm an over forty victim of fate Arriving too late, arriving too late...

    No wrap baby back ribs.

With so many different ways to go about cooking ribs, I decided today to do no wrap, no sauce, just put 'em on and let 'em ride. 225 for 6.5 hours with just some mustard binder and simple rub. They were 197 degrees internal when they probed tender and bent nicely. Turned our very flavorful...

Which RT_340 would you rather buy if I decided to sell one of my two?

So I have an RT-340 that I have had for a little more than two years now, love it and it gets used much more than my other grills, probably about three to four times a month or so. I also have a new in the box, still banded, never opened RT-340 that I bought earlier this year when it was an...

These really should not be this good.

Regular and golden Oreos wrapped in applewood smoked bacon. 250 for one hour. Crazy good.

A fairly good use for leftover pulled pork.

Made some fried eggs, sauteed the pulled pork in some bacon drippings and then sprinkled the whole thing with some Ron’s Screamin’ Pig and drizzled it all with Tiger Sauce. A good way to start the day.

Saw this while driving down the road today.

Decided right then what to have for lunch.

    Low carb game changer.

I have to eat low carb because of diabetes and have been struggling with giving up a lot of the good stuff. You know, bread, biscuits, chips, fries, fried foods, pasta, cakes etc... I recently discovered something that for me is going to be a game changer...chaffles. Now, this is not hyperbole...

    Best looking smoke ring yet.

Brisket smoked with maple pellets today on my RT_340. Last one I did the exact same way with same rub, same pellets, same basic everything and had practically no smoke ring. This one today the smoke ring looks great. Taste was good just like last time, moist and tender, nice bark. Wonder what...

    Trimming away the good stuff.

I made one of the best briskets I have ever made yesterday. Exceptionally moist, tender and flavorful. As we were finishing up, a friend stopped by and we offered him a plate. He immediately started trimming away the thin fat cap and delicious bark before even taking a bite. He said he does not...

What am I doing wrong with the app?

I like the look of the app update but the temperature history is not displaying right. Has done this since the update. It displays the current cook way over to the right and the display across the rest of the screen I don’t know about. Grill and app were turned on at 6:40 am. Why it is...

Burgers, sausage or wings. Could not decide.

    So I made all three.

Cooked a chicken over a pan of veggies. No clean up.

So today I made a spatch chicken over a pan of broccoli, grape tomatoes and one regular tomato too. Also made some stuffed boneless thighs wrapped in bacon (they came off first). Anyway, the pan did not seem to affect cooking time or smoke and if anything, the skin on the chicken was crispier...

    Pulled pork omelette.

When you make 10 lbs of pulled pork, there is bound to be enough leftovers for an omelette. Probably one of my favorite uses for leftover pulled pork. Sauteed onions and peppers in a little olive oil, added the pulled pork and just a bit of salsa, reduced the liquid in the salsa, added lots of...

Pepper Jack cheese-stuffed burgers...and the cheese did not leak out.

These were quite good. Topped the burgers with creamy coleslaw and A1 sauce. Sometimes when I do these, the cheese leaks out, but this time it worked just fine. Maybe the trick was a block of pepper jack instead of shredded, I don't know.

Soaking brisket in its own juices.

So today I did a brisket. 220 to internal temp of 155 then wrapped in foil to 198. Then rested in the oven wrapped in towels for a couple of hours before slicing. I pierced the foil and drained juices in a pan and put the sliced brisket in the juices to soak for about 30 minutes before serving...

A nice addition to my grilling area.

No, not another grill. If I got another I think my wife's head would explode. Besides the three pictured here, in my outbuilding are another kamado, a Blackstone griddle and a smaller Weber gasser. The addition is the Harbor Freight tool cart that will become my prep cart, storage bin, place to...

Fired up the grill for no reason.

Was sitting on the porch, just enjoying a sunny spring day, no plans other than relaxation when I decided I want to see some smoke coming out of thr RT-340. Did not want to run to the store to get anything to grill, had not thawed anything from the freezer, so I just put on some hotdogs, a...
