I made one of the best briskets I have ever made yesterday. Exceptionally moist, tender and flavorful.
As we were finishing up, a friend stopped by and we offered him a plate. He immediately started trimming away the thin fat cap and delicious bark before even taking a bite. He said he does not like the fat or “black stuff.” I encouraged him to try a bite without trimming but no.
I was a bit taken aback, especially since we had just enjoyed it tremendously.
Anyway, he said it was the best he had ever had, “Much better than at any BBQ place.”
I did not say anything about how much better it would have been had he not trimmed it like that, knowing he had missed out on a real flavor treat.
I don’t like it when someone complains when I put ketchup on my steak, so just felt it was not worth saying anything.
No pictures, but it was good. Just had leftover grilled cheese brisket sandwiches for lunch, fat, black stuff and all.
