    Stampede Smoked Cheese

First Attempt Smoking Cheese So I received a pair of smoke tubes for Christmas, smoked some cheese and vaccum sealed it. The cheese (cheddar) seemed to have sweated slightly before i took it off the smoker. Will it be okay?

    The stall ….

Being able to see this phenomena occur and watch as you cook through it is very interesting for me. How long each stall will be is dependent on so many conditions but if you follow the temperature guidelines it will be perfect every time.

    Stampede Cook Trend Stops

So the past 2 briskets have been overnight and at midnight the cooking trends appear to end. I adjust the app several ways and found that by turning off the smoker and immediately restarting, the data will appear.

    Stampede Still Happy…..Stampede Owner

I ordered my 590 just before the pandemic and many cooks later it’s still been my preference. My ribs always come out as my wife likes them, butts are fabulous and even briskets have been spot on. The only bump in this has been the temp control in the summer and I figured this to be caused by...

    RecTeq App suggestions

I would like to suggest the following changes to RecTeq app. Make the temp range selectable in a range that would allow users to see temp gradients at 600 degrees the grill temp is so low temp fluctuations are imperceptible. Suggest 300, 400, 500 as the later is seldom used. Allow direct input...

    Stampede Chicken done the RecTec

So my wife likes roast chicken and we have learned that one smoked is the best way. The trick is brining the chicken the night before and then preparing seasoned butter and placing it under the skin. I’ve done this both spatchcock and traditional and both are fabulous. Here’s today’s traditional.

Poultry Brine recipe for Beer Can Chicken

I did a beer can chicken today after I used a simple brine of 3/4 cup kosher salt, 2/3 sugar, 3/4 cup Dales and 1/2 cup Zatrains Liquid Crab Boil. 1/4 cup olive oil. Brining over night. I put Tony Chacheres as a rub and the chicken came out great. It had a good spicy kick for me if you want...

App Question: Deselecting Probes A and or B?

So I’m very satisfied with my 590 and the app control on my I phone and perhaps I’m being picky but I wish the app would allow me to turn the probes on when I wanted to or perhaps allow it when installing the app. I don’t like seeing it lying there on the bottom of the temperature scale when...

To turn or not to turn that is the question

So I’m doing my first ribs on my RT-590 set at 225 do I need to turn them over after a time or just let them go for 3 hours until I wrap them? Thoughts?

How Do I Change Pellet Type

So my Stampede holds 30# of pellets right, so if I load that bad boy up and decide to change over to hickory next cook how do I change ? I’m thinking of fabbing a vacuum nozzle using pvc and attaching to my shop vac. I was wondering if the folks at Rec Tec ever thought about making the hopper...

Hello from Mobile, Alabama. The portable city.

I’ve always loved cooking on the grill and my wife bought me a offset smoker 2 years ago for Christmas just to see how I liked it. The smoker is one of the cheap as she only paid $100 for it, but I’ve loved playing with it trying to get it to hold temp and smoking ribs, chicken, pork loins and...
