Pan seasoned chicken
Sauteed garlic and onion
Strips of charred pasilla chillies
Monterey Jack cheese
Cheddar cheese
Corn tortillas
Smothered in fresh Hatch green chillies (personally transported)

Looks great, we have done that as well and it is to die for delicious.

Looks good @NBK A couple of questions...

Was the chicken smoked and shredded in your "pan seasoned" or straight up pan cooked?

Did you cook the whole thing with smoke or at higher convection heat?

I'm thinking adding a smoky element to the chicken, the Hatch chiles, etc. would be sublime. It'd still be damn good if you didn't.
 
Used the pulled Costco chicken for ease and moisture. And I did not smoke the chicken. I didn't want the smoke to be the key flavor. The pasilla chillies and the Hatch chillies are the star.

Ran the Bull @ 180° for 90 minutes and then cranked it up to @375° for 40 minutes. The smoke was evident but not overpowering.
