Rib meat recipe’s

I’ve trimmed some full slabs of ribs into St. Louis cut and have the trimmings (which I’ve frozen).

Any favorite ways to prepare this?
 
My fav:

Olive oil binder
Meat Church Hot Honey Rib Rub
Myrons Hickory

240 the whole way, depending on the racks with about an hour left glaze with melted butter and honey blended. No wrap at all. Usually 5.5-6.5 hours depending on the weight.
