So I oven fried wings in the oven for lunch a bit ago. Here's how.
I don't usually use my smoker as a grill, but there are some pellets I want to use up. Grilled a steak earlier this week and want to do some more wings on it in a few days.
Today. Coated dry wings in 50/50 baking powder and corn starch. Refrigerated a bit to further dry them. 375 for 30 minutes. Set to 425 and pulled them and sprinkled a little rub, flipped and more rub. Back in for about 15 minutes, flipped and another 5 minutes in the oven to brown up that side. They came out good and crispy, but I overheated the rub. I just can't resist adding stuff.
I'm anxious to see how this method works on the 590.
