Stampede First Smoked beef sausage on RT-590

My first smoked beef sausage came out a little chewy!!! The casing was a little chewy. What did I do wrong?
1. Set Low setting on RT590
2. Get the sausage on grill when the temperature ready
3. Cooked sausages till inner temperature at 150f-155f
4. Cooled the sausages in ice water bath when inner stop cooking around 90f
5. Risen the Grill up to 225F and get the sausage back on grill one last time cooked till inner temperature reach 150f again.
All these, I just follow one of the YouTube
Any advice!!

Do you rinse the casings thoroughly and then soak. I let them soak for at least 24hrs before I stuff.
 
I've smoked store bought sausage with the same results.
 
With store bought sausage I roll them around on the gasser at 425 for a quick sear then smoke the rest of the way on low. Cuts way down on the chewy texture.
