Not bad for first smoke. Probably could have gone another 1/2 hour.

Taste was great a little longer would have made them a little bit more tender I think

They look good. . .
Time/ temp is just kind of a target to start checking. Each slab of protein will act a little different. Had 2 (what looked to be) identical racks of ribs. One was about a good 45 mins behind the other, and they were switched around on the 590 as I know the right side runs about 15° hotter than left side.

My 700 runs hotter on the right side too, I noticed. Not sure by how much but food gets done faster on that side than the other. For whatever reason, perhaps it has something to do with heat trying to escape thru the stack? That would be my guess as appossosed to the static left side.
