So now that semi-annual weigh-ins and physical fitness test are over it's time to celebrate and get my smoke on this weekend and watch my Notre Dame beat the britches off Louisville.
Going to smoke a butt and shoulder. I will also be trying something new-ish. I dont inject much but been reading alot about Chris Lilly who is a 6 time champion for pulled pork. So I figured I'd give his recipe a shot. I change up two things, cut his salt back and add a second juice over water. So well see how itll go. Will add the rub on when I get up at 0700 tomorrow and then again just before they go onto the smoker.
I have both marinating as we speak and will go on tomorrow around 9pm. Should get me in the ball park for a 430 Saturday dinner...
And yes I butcher tie all my butts and shoulders even with the bone in. Keeps the protein uniform for a even cook and together as it get tender
