just cooked a baby back rack - 235 deg for 3 hours - with mustard / apple juice / Worcestershire & screaming pig rub, 2 hours in alum wrap w' honey / brown sugar / apple juice, 30 min @ 200 deg w' modified sweet baby ray's - spicy vinegar / brown sugar / apricot jam. Really good - I've eaten ribs in a lot of restaurants. These can hold their own. I like them "fall off the bone". Wife loved them.
Also used the mesh earlier w' salmon on a gas grill at 400 deg (not direct flame) - worked very well. Easy to clean.
I'm using my gas grill for searing, hamburger, brats & the 590 for lower temp stuff. Although I've been having good luck with 500 deg pizza on a stone in the 590.
