I’ve done it like this for years. It freezes well and cooks evenly when the time comes. I do add more enchilada sauce and cheese before the oven cook.Never thought of freezing assembled enchiladas if that’s where yours are headed, I freeze the sauce but that’s it. Simply a double wrap of plastic. I assume you’d get freezer burn if left long enough. But just a double wrap.how do you store the? Vacuum seed bags? I like your Idea, never thought of it either.
