Bull Flat Iron on the Bull

Just a little Flat Iron steak on the Bull tonight. Cooked at 225 pulled at internal of about 120 and seared till about 135. Taste amazing…rub was a light dusting of kosher salt and Trader Joe’s coffee rub.

Looks great. I really like some of the coffee rubs. Coffee seems to pair pretty well with mild chiles.

Probably about an hour. Maybe a little more. I’ve been cooking those a lot of years now. On the Weber kettle. This was the first on the Bull. But I don’t really watch the time anymore. I can kind of make a pretty good guess of internal by looking at it. But I check with my new thermapen👍 Anyway. I sear when internal hits around 120. I finish searing when they hit around 135.
