Not a baker, and certainly not a cook, but tiring of the price increases on sourdough bread, I began to bake my own. My new Recdeq pellet grill seemed to be a candidate, so this morning it proved itself. Easier than the electric oven, and no heat in the kitchen. Impressed with the ease that the 1250 climbed to 500 degrees, and pleased with the results.

For Two Sandwich Loaves:

1140g Flour (680g Bread Flour, 460g AP)

810g Water (72% hydration)

228g Starter

23g Salt

For One Sandwich Loaf:

570g Flour (342g Bread Flour, 228g AP)

405g Water (72% hydration)

114g Starter

12g Salt
