Bull Smoking sausage on the Bull

if hunting interest you call your state fish and game office and tell them your situation and ask how you can legally do it. i have met alot of felons in sc with hunting a muzzleloader. its not a gun by definition so you should be able to. unless va/dc has a unique law.
 
So, here it is. We’ll, at least 2/3 of it. I couldn’t get it all on the grill in one batch. Had to take care of the cold-smoked summer sausage so I got a late start. Took about 6 hours altogether but I believe it worked out really well. Smoked a batch of andouille and a batch of chile relleno sausage this afternoon. I guess tomorrow I’ll smoke the jalapeño popper sausage. The Bull did well with the offset temp hi- smoke setting. I had an issue with what I’m assuming is flame outs at the start but once I got it settled it ran like a champ, if not a little slow. But the 32 degree temp and a little north breeze I’m sure played a factor. Used a blend of Lumberjack hickory and cherry pellets. Pulled them at 153 then into the ice bath. Letting them dry on racks for a spell before I vacuum seal them and call it done.
