Stampede Smoked fish dip

I'm looking for a smoked fish dip recipe. I have some haddock on hand but I don't know if that would be a good choice for a dip. I have seen several recipes but they call for either smoked whitefish or adding liquid smoke. I would rather try smoking the fish myself.

Thank you, Fishinzak. The process looks quite involved but I will try it with haddock because I can't get bluefish here in Tennessee. I'll let you know how it turns out.

Haddock smokes well, so it should be a good substitute for Bluefish. You might take a look at this thread for a dry-brine option.

The dry brine recipe was developed for salmon and trout, but I have used it with other fish with good results too. Maybe try a small batch first to see how it works for you.
