I cooked thick pork chops on low setting, at about 125 degrees I pulled off. I covered them and kicked up grill to 500. at about 425 I put on sear plate and finished. I was wondering if you can leave them on the grill until you reach searing temp then throw on searing plates?. Also I want to do hamburgers on low to get some smoke then finish on sear plate. Any suggestions are appreciated.
