Used what I had on hand and it turned out great. 350 degrees until internal temp in thigh hit 165. Took about an hour and a half.
Used the V8 instead of beer
Injected with Goya Mojo(strained)
Slathered with Dukes and applied creole seasoning

Coulda had a V8! Looks good! Nothing wrong with using what you have! Many a good creation came from just that.
