Thought I'd try some armadillo Eggs on the RT. Jalapeno stuffed with cheese, wrapped in sausage, wrapped in bacon. Starting to really like this little smoker.

Amazon I believe. It's actually a rib rack I left my pepper rack on my big cooker and was too lazy to go get it.
 
Yeah real simple whatever stuffing you want (cheese or cream cheese or sausage and cheese) wrap in a ball of your favorite sausage, then wrap with your favorite thick sliced bacon. Extreme smoke until internal is around 90-100 then heat up a bit to get the meat to around 160 and you are set.

The wife made these Jalapeno stuffed with some sort of cheese, sausage then wrapped with bacon many times but never heard them called Armadillo Eggs, I thought it was something the she dreamed up for a different kind of popper. Anyways they were very good. We never smoked them on the Bull but will definitely try doing this.
