Last year I was close to getting a whole leg (Berkshire) and making/curing my own prosciutto at home. After all the research and time to cure in a cool environment and my wife telling me we don't need 20 lbs of prosciutto, I bagged the idea. Still in the back of my mind. ??I have raised quite a few pigs. Berks were always my favorite to eat, but the worst growing breed I ever had.
Durocs were a close second in taste, but they always grew like crazy.
I know around here that Durocs are much easier to get your hands on for that reason alone.
