Made 3 racks of St. Louis ribs last night. Used the standard 3-2-1 method (6 hours total).
In the "2" phase (aluminum foil), sprinkled brown sugar, butter, and *Mike's Hot Honey* (honey with chiles). The sweet heat from the chiles made a big difference. Was awesome!
Wasn't bad, maybe about 18 hours total. I used this video as a template: . Ultimately I made mine about 8 inches wider, and didn't enclose the back (I wanted better airflow).
spent the last 3 weeks building the rig (cedar w/ porcelain tile top) in prep for the 700 (arrived today). Gonna break her in tonight with the initial 400 degree smoke and then hit some ribs this weekend. Happy to have joined the RecTec family!
