Just picked up full packer and will render down the leftover fat to use as tallow. But I'm not sure how long it's safe to keep once refrigerated. Any tallow experts out there care to weigh in?
12 Months in a coffee can right next to your stove, 18 months in fridge, 2 years in freezer.
Lard keeps even longer.
Rancid tallow/lard will not kill you.
I have had a sealed plastic container filled with rendered tallow in the fridge for 2 months now and it’s fine. I am careful to always use clean utensils to pull what I need. Love sautéed veges in tallow.
