I decided to try making baby back, St Louis and country style ribs.

I did them all 321 with competition rub and home made sauce.

The country style ribs were over cooked using the 3-2-1 method. Next time I will cook those two temperature, 203 internal we'll probably get a better result. Honestly, to me the baby backs and the St Louis were equally good. The St Louis had a little more fat content, which I like. Personally, I prefer the st. Louis style. My wife liked the baby backs better. House divided!

I'll post the recipe for the sauce tonight.
