Great use for leftover brisket and really tasty.
Ingredients:
4-6 oz. smoked brisket
Red onion (sliced thin, about 1 T)
5-6 oz. grated Mozzarella cheese
BBQ Sauce
Crust:
12” pizza skin
Optional apply to finished crust:
1 T melted butter
1 T parmesan cheese
Instructions:
1. Preheat pizza stone in Rec Tec to 500 degrees for one hour.
2. Stretch pizza skin to 12” diameter.
3. Spread BBQ sauce on the pizza skin.
4. Break up the brisket to small pieces and mix in some BBQ sauce and then plan on pizza.
5. Top the pizza with the cheese and then add onions. Put in oven and increase heat to 550 degrees.
6. Bake for 6-8 minutes; remove and brush with butter and then sprinkle the crust with the parmesan cheese. Place on a cooling rack for 4-5 minutes before slicing.
Finish by applying some BBQ sauce over the top of the pizza.
Notes: You can also add some cheddar cheese to the mozzarella cheese!
