Hmmmm , I’ve been following Heath riles on utube and he does them at 275 ,and wraps at 160 degrees to get through stall ...... guess I’ll put it on a little earlier just to be safe

Starting earlier on these cooks is your friend and if finished early you can always wrap in foil or butchers paper and put in warmed up cooler to rest and keep it warm for pulling.
 
That's about the time I start mine at that size at 225 and they go 13+- hours. You definitely want to finish early for a several hour rest. Even after the rest, it will still be steaming hot.
 
Came out amazing...... cooked it at 250 till temp reached 160 then wrapped and cooked till it hit 200 , the meat just pulled apart ....... total cook time was 10 hours , then rested in cooler for around a hour and a half , had a early dinner .....lol
