Starting earlier on these cooks is your friend and if finished early you can always wrap in foil or butchers paper and put in warmed up cooler to rest and keep it warm for pulling.Hmmmm , I’ve been following Heath riles on utube and he does them at 275 ,and wraps at 160 degrees to get through stall ...... guess I’ll put it on a little earlier just to be safe
Let us know how it goes and if your 3am start time was enough time for your cook to be done and served at 6pm.Started butt at 3 am , hopefully it will be enough time , now back to bed ......lol
