Oops!

I have always done my briskets and butts on low overnight and the temp is always about 140 in the morning. I then crank up the temp to 250 and go from there and have never had a problem.
 
I wouldn't sweat 7 hours at 180
We smoke our Pork Butts for 10 hours at 180, butterflied open
Get a good Smoke and Bark lied on them
Rap an back in at 250 for an additional 2 - 4 hours, until they reach 200 internal
Haven't had any complaints on my Pulled Pork yet ;)
