Dan there are a lot of different opinions on the web and its hard to find a good method. So FWIW here is what I do. Thaw 24 hrs before you want to cook. Pat dry and place on a tray over night in refrigerator. Around noon I dry again and lightly coat with baking powder and back in refrigerator. I use Yardbird rub 1/2 hour before cook. I smoke at 225 for 45 min to 1 hour. Then crank up to 350, I cook 15 minutes a side of until I like the crispiness. Some eat with just rub sometimes I sauce them.
