I decided I would get my lamb roast ready for smoking tomorrow. All of the herbs came from my garden. I just love the colors against the meat. Looking forward to a fun cook tomorrow.

@BethV whats your final IT after searing, I like my beef rare but bring my lamb to a med-rare

That looks great! I smoke lamb riblets and chops on the 590 but have yet to try the bigger cuts for lack of esxperience.
