Was able to dedicate some time for my first 3-2-1 adventure into this pellet world. I grabbed a ok set of St. Louis style ribs I started with a mustard binder and then some recteq Casanova rub got the 590 to 250 threw the ribs on and every 30mins I sprayed with Coca-Cola. After 3 hours I pulled the rack off wrapped it in butcher paper with some brown sugar and butter and sprayed with Coca-Cola one last time. Let it run at 250 for another 2 hours. Went to put it on for the last hour after unwrapping 30 mins in I decided to pull them cause I wasn’t gonna sauce as I prefer a dry style over a saucier style. As a side I made some bacon/Colby Jack wrapped corn from one of the recteq videos on YouTube (350 until the bacon finished) while the ribs rested. Everything came out great didn’t get a picture of the corn but got a picture as the ribs where falling apart.
