I think Rec Teq says chicken thighs but I was going to go with baby back ribs. Is there a reason that the ribs could be a problem?
 
I’m pretty sure I started out with ribs and to date I’ve yet to do a chicken, unless wings count. Has someone else said above, cook whatever appeals to you.
 
I think RecTeq recommends chicken thighs because:

a. The first cook is often right after burn in and the grill is hot. You don’t have to wait for it to cool down much if any.
b. Chicken thighs throw off a good amount of grease splatter which helps season the grill faster.

If you don’t mind waiting for the grill to cool, or in your case you burned in a while ago, then like the others have said just start cooking a bunch and everything will take care of itself.
 
This "must cook chicken thighs for the 1st cook" is urban myth :rolleyes:
I guarantee it won't make any difference in the results for anything you cook on it.
Just cook whatever you have on hand and enjoy your new grill.
