I finally cooked my first(2) chuck roast for burnt ends today. They are not nearly as good as brisket burnt ends. They were tender but just not the same taste. I ended up chopping them and adding some of my homemade BBQ sauce for chopped beef sandwiches. Even the fat renders totally different. When brisket fat is rendered correct it taste really good. I had made burnt ends from brisket twice in the last year on my RT 590 and they were great. I had been wanting to try this for a while........... Now I know!

I find myself embarrassed by your experience; I've been enjoying outdoor cooking for five years and, while I've enjoyed many brisket meals, I've only used chuck roasts for burnt ends, lol. We've had chuck roast burnt ends many times and all of us rave at the results. I'm planning to take a little R&R in December and your experience is inspiring me to do the tried-and-trusted brisket burnt ends. Thanks!
