Have been watching posts of folks using their sear plates and it made me pull mine that I have not used in 5 years off the shelf. I got these when I got the 680 over 6 years ago and used them maybe 3 times with ok results. Now reading the posts of people using them and seeing the results I decided to blow off the dust and do some ribeyes tonight. I did the 180 temp until 110 ish , pulled them off then cranked it up to full, when it hit 520 I tossed them back on for a few minutes each side. The best looking steaks I have made to date on the Rec Tec. Thanks to all for the advice on the ideas and use of the sear plates, they will not collect dust on the shelf for 5 years anymore!
