I did some beef ribs yesterday along with some roasted potatoes and Brussels sprouts. I was extremely pleased on the taste and tenderness on these.

Great looking ribs and great looking sprouts. If you like bacon (and who does not like bacon) I roast Brussel Sprouts with bacon and shallots......hmmm hmmm good. Just be sure to partially cook the bacon before roasting the sprouts and add bacon back in for the last 5-10 minutes.
 
I do put bacon on them sometimes. This time I just cut them in half and put them in a cold non stick pan with about 3 or 4 teaspoons of olive oil. Turn the heat on medium high and cover with lid for 5 minutes. After the 5 minute I take lid off and check them for color. I usually will cook them another 2 to 3 minutes. I’ll plate than finished them with salt and lemon juice and fresh pecorino.
