321 Ribs

Just posted this on another thread.... Check out Fattybombatty's BBQ Journal. Has become a great history lesson so history does or doesn't repeat itself. Ha. Even when i have nailed it in the past i like to try new things. Reminds me of the Pizza Review guy (one bite everyone knows the rules). You will never get a 10 rating because there can always be the next cook that is even better. The journal really helps me eliminate the mistakes too (so i don't forget a step).
 
Did my second try at 321 today. Changed it up a bit so here goes.
Did first hour at 180 to increase smoke. It definitely have more flavor.
Use a different rub used Pork Barrel all American seasoning definitely a different taste
Kept ribs on a little longer. The were pretty much perfect texture.

I need to look up that journa!.
