Just got back from Costco with my brisket. It’s 11.51lbs. The goal is to eat at noon on Saturday. If I have it on the RT-680 at 5pm Friday am I giving myself enough time?
How much does your smoker temp vary based on the readout and what it is nearer the cooking grate? Currently my RT680 is showing 265, but my temp probe is reading 225 about one inch above the grates in the center of smoker.
Hello from North DFW Texas. Got a RT-680 from a neighbor who was throwing it out because “the electrical was shot”. I think he was just saying that because he wanted a new smoker, because I got it up and running. Held at 275 for a bit then at 400 for a bit.
