Both my temp probs are acting strange , checked my meat with the termapen and it was 160 , put the probe that came with grill in and it was bouncing all over the place, from 130 to 190 , did this for a few mins then it settled down at 162 , anyone else have this happen

I’ve read that I need to season grill grates with canola oil after initial burn in , is this true , if so is vegetable oil ok to use , getting my 590 and I’m ready to try some 321 ribs ..... thanks for the help
