I cooked this brisket fat cap up but I’m going to try fat cap down next time. I honestly don’t think it’s gonna make a huge difference but I guess time will tell.
Rub for brisket:
1/2 cup kosher salt
1/4 cup course ground pepper
2 Tbsp ground celery seed
