I have no idea how you did that, but I felt compelled to try it. I already went to the store this morning and saw a bone-in pork shoulder on sale. I just went back to pick up a pineapple, some pineapple juice, etc. Just mixed up a simple marinade with Mexican oregano, salt, chipotle pepper, cumin, garlic, onion, and a couple of bay leaves. I'll soak overnight and inject later tonight or early tomorrow morning to try and replicate what I see above.
Damn, yours looks better @rjay. I guess I'll see what happens and report back. Depending upon the weather, I may try to start the cook late tonight or early tomorrow morning.
