How big of brisket can I fit on the 340

No problems with a 15 pounder on mine....room to spare....

Mine took 12 hours at 250f wrapped in butcher paper at 165f at 8 hours
turned out great flat and point where moist put a water pan in the smoker
with the brisket took it out at 7 hours so the bark would set?
 
Oh forgot to mention if u way ur trimmings it’ll give u a more accurate time when
the brisket is done.subract the amount of trimming from the total wt It’s about a hour to hour fifteen per pound at 250f Works for me every time
 
15# trimmed to about 13.5#, bought at Costco and the whole 15# would have fit. I may have trimmed too much fat off but the supervision here approved of the final product. 250F for 6.5 hours in Florida humidity - it was cloudy and light rain - cooked to 203-295F. it was very good but a leaner cut so, I will leave more fat on next time.
