Brand new to the pellet smoker and just burnt in and seasoned last night. Thighs were awesome. Had a couple minor issues. The grill took about 45 min to reach 400 then towards end of cook it was over shooting temp by 17-35. I am using Weber comp blend pellets and it was about 45-50 when doing burn in. Just a little concerned if I do ribs or a brisket or worse a prime rib

Opening the lid may cause overshoot.
 
Only opened to add chicken then 20 min in to flip and lastly 20-25 min later when it was 35 over to pull them.
