Grilling steaks on the RT590

I have a RT590 which I absolutely love. I am cooking some T-bone steaks later today and while I have often done the reverse sear method, I'm not sure these are thick enough so I am thinking of just grilling them using my "searing station" grids. My question is, I have looked at some videos on this that suggest removing the deflector before grilling? Has anyone done this on a RT590?

No, haven’t removed the deflector - just cooked our Porterhouses on the searing grate, tines up at 600° for about 3 1/2 minutes a side (we like ‘em rare)…

Discovered on our 410 patio legend that it’s much hotter toward the back of the grill, so turning the grill mate so the tines run parallel with the width allows to scoot it a little closer to the front of the grill… this does circumvent the grill maté spatula from sliding in between the tines; but, I used tongs so that didn’t matter.

Just mentioning I’m cooking a London Broil today… 8 hours in the sous vide, a couple of minutes on the grill for flavor!

Bon appétit y’all, -Rick
